3-3 lbbroilers, split and boned. (3 chickens 3lbs. each)
7 ozbread crumbs
11 ozlukewarm water
1 mediumspanish onion, sliced
4 ozrendered chicken fat
4 ozfresh chicken livers
How to Make Corbett Chicken
- Add breadcrumbs to water in a medium mixing bowl. Let stand 10 minutes.
Brown onions in fat, then saute chicken livers in the same skillet. Put onions and livers through a meat grinder and mix with breadcrumbs. Add all spices to stuffing cover and chill overnight.
- Take the mixture out of refrigerator and place in a baking dish. Use as a stuffing for boneless broilers. Form each chicken around stuffing to get a chicken like shape.
- Lightly broil to get the skin nice and light brown. Just a few minutes.
Adjust stove to bake at 350^ for 20 minutes.
- * I don't put all the salt in stuffing. Just a pinch. Then I rub the chicken with some of the salt as a rub. Which I think was probably meant to say.
