Another historic recipe. I haven't looked him up yet but this recipe stated that it was "Gentleman Jim" Corbett's recipe. A boneless whole chicken recipe that was his specialty and passed down through generations and ended up on this old farmhouse wall of treasures. An estate owned by "gentleman Jim" called Wendover Farms is where this Corbett chicken was famous.

Ingredients
- 3-3 pounds broilers, split and boned. (3 chickens 3lbs. each)
- 7 ounces bread crumbs
- 11 ounces lukewarm water
- 1 medium spanish onion, sliced
- 4 ounces rendered chicken fat
- 4 ounces fresh chicken livers
- 1 teaspoon parsley,chopped
- 1/4 ounce salt
- 1 pinch pepper
- 1 dash thyme
- 1 dash basil
- 1 dash oregano
How To Make corbett chicken

Step 1Add breadcrumbs to water in a medium mixing bowl. Let stand 10 minutes. Brown onions in fat, then saute chicken livers in the same skillet. Put onions and livers through a meat grinder and mix with breadcrumbs. Add all spices to stuffing cover and chill overnight.

Step 2Take the mixture out of refrigerator and place in a baking dish. Use as a stuffing for boneless broilers. Form each chicken around stuffing to get a chicken like shape.

Step 3Lightly broil to get the skin nice and light brown. Just a few minutes. Adjust stove to bake at 350^ for 20 minutes.

Step 4* I don't put all the salt in stuffing. Just a pinch. Then I rub the chicken with some of the salt as a rub. Which I think was probably meant to say.
