coconut curry chicken with basmati rice

Ingredients

  • 4 - boneless skinless chicken thighs
  • 2 tablespoons curry powder
  • 1/2 cup coconut milk, unsweetened
  • 1 tablespoon small onion(chopped finely)
  • 3 tablespoons vegetable oil
  • 2 cups basmati rice
  • 1 - chicken bouillon cube
  • 3 cups water
  • 1 teaspoon kosher salt

How To Make coconut curry chicken with basmati rice

  • Step 1
    in a large pot, put 1 tbsp. of vegetable oil, and crumble the chicken bouillon cube, add the rice and stir, add the water, when the water comes to a boil reduce to medium heat, once the water has evaporated, drop heat to low and cover, let it cook for about 25 mins, fluff rice with fork.
  • Step 2
    cut the chicken into bite sized pieces, season chicken with salt and black pepper.
  • Step 3
    preheat a large skillet.
  • Step 4
    add curry powder and stir until, the chicken and onions are coated with the curry powder.
  • Step 5
    add coconut milk and simmer until thickened. serve with the cooked rice
