Ingredients
- 6 - chicken thighs
- 2 tablespoons fresh ginger minced
- 1 tablespoon lemongrass paste
- 4 cloves garlic minced
- 1 teaspoon white pepper
- 1/4 cup soy sauce
- 2 tablespoons sugar
- 2 tablespoons curry powder
- 1 can coconut milk
- 1/2 cup sweet chili sauce
- - cilantro leaves for garnish
- - lime wedges
How To Make coconut curry chicken thighs w sweet chili sauce

Step 1mix the ginger, lemongrass, garlic, white pepper, soy sauce, sugar, curry powder and coconut milk together.

Step 2Poke holes in the chicken meat with a fork. Marinate the chicken in the curry mixture for 6 hours or overnight.

Step 3Preheat oven 375 degrees. Place chicken skin side up with the marinade in a baking pan. Place in oven and bake 25 minutes. Remove from oven and brush the tops of chicken with sweet chili sauce. Place back in oven for about 10 minutes. Serve with lime wedges and garnish with cilantro.
