MY FRIEND GAVE ME THIS RECIPE LONG AGO....I MADE IT THE OTHER NIGHT AFTER GOING THRU MY RECIPES N REMEMBERED IT WAS A GOODY. YOU CAN ADD MUSHROOMS, BROCCOLI AND/OR CARROTS FOR A MORE COLORFUL N COMPLETE MEAL :)

Ingredients
- 1 tablespoon curry powder
- 3/4 cup onion, chopped
- 1 can coconut milk 13.5 oz.
- 3-4 large chicken breast, cut into strips (i used 3 very large)
- 2 teaspoons 5 spice powder
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red curry paste
- 3 cups cooked white rice (i cook mine in chicken broth for more flava)!
- 4-5 tablespoons olive oil
- 1/2 cup chicken broth

Step 1IN A SMALL SAUCEPAN HEAT UP 2 TBLSP. OF OLIVE OIL N SAUTE ONIONS ADD RED CuRRY PASTE THEN ADD CURRY POWDER N COOK FOR A MINUTE THEN ADD TOM PASTE N STIR. ADD COCONUT MILK N CHICKN BROTH. SIMMER UNTIL REDUCED ABOUT 20 MINUTES....SEASON TO TASTE

Step 2IN A LARGE ENOUGH BOWL TOSS CHICKEN STRIPS WITH 5 SPICE POWDER N 1/2 TSP.EACH SALT N PEPPER. IN A LARGE PAN HEAT 2 TBLSP OF OLIVE OIL...LET IT GET HOT. ON HIGH TEMP. STIR FRY THE CHICKEN UNTIL JUST COOKED, ABOUT 6 MINUTES.
