Ingredients
- 2/3 cup rice vinegar
- 1 can coconut milk
- 1/4 cup soy sauce
- 8 cloves garlic smashed
- 1/2 cup sugar
- 2 - inch piece of turmeric or ginger peeled and sliced
- 4 - birds eye red chilies smashed
- 1 - whole chicken cut into 8 pieces
- - fresh rice noodles for serving
How To Make coconut chicken adobo

Step 1Mix the rice vinegar, coconut milk, soy sauce, sugar, garlic, turmeric, bay leaves and red chilies together in a large bowl. Add the chicken and coat well. Let marinate at least 3 hours or overnight

Step 2Transfer the chicken and marinade in a large deep saucepan. Bring to a boil and reduce to a simmer and simmer for 30 minutes.

Step 3Remove the chicken and stain the sauce discarding any solids. Bring sauce to a boil and reduce to thicken. Serve over rice noodles with sauce
