1-2/3 cslaw dressing
2/3 capricot preserves
1/3 cpecans, chopped
1/3 ccucumber, remove seeds, chop & drain on paper towel
1 cplain bread crumbs
1 cflaked coconut
1 lbchicken breasts
How to Make COCONUT BREADED CHICKEN WITH FRUIT SAUCE
- Preheat oven to 375^.
Sauce: mix together 2/3 cup slaw dressing, apricot preserves, chopped pecans & chopped cucumber, set aside.
- Mix the bread crumbs & flaked coconut together. Cut chicken breasts into bite size pieces.
Spoon remaining slaw dressing over each piece, and roll the pieces in the bread crumb/coconut mixture.
Place on cookie sheet & bake 15-20 minutes or until chicken is done.
Serve chicken with sauce on the side.
