Chicken Cordon Bleu is one of my favorite dishes. It's really not that hard to make, and if you freeze ahead of time, you can just pull them out and throw them in the oven for a dinner party and your friends will be super impressed!

Ingredients For classic chicken cordon bleu

  • 6
    boneless, skinless chicken breast halves
  • 6 slice
    (3/4 oz.) lean, cooked ham
  • 6 slice
    swiss cheese
  • 2 Tbsp
    chopped, fresh parsley
  • 1 c
    dry, seasoned bread crumbs
  • 1/2 tsp
    paprika
  • 1 tsp
    salt
  • 1/4 tsp
    ground black pepper
  • 1 c
    warm milk
  • 1/3 c
    butter, melted
  • vegetable cooking spray
  • chopped fresh parsley, optional

How To Make classic chicken cordon bleu

    If chicken breasts are particularly thick, you can slice them through the middle to split if necessary. Place each chicken breast between two sheets of waxed paper; flatten to 1/4 -inch thickness, using a meat mallet or rolling pin. Place 1 slice of ham and 1 slice of cheese in the center of each chicken piece. Sprinkle center with 2 Tbsp. parsley. Roll up lengthwise and secure with wooden picks.

    Combine breadcrumbes, paprika, salt, and pepper; set aside, combine warm milk and melted butter. Dip each chicken breast in milk and melted butter; roll in breadcrumb mixture. Microwave milk mixture for 30-60 seconds if the milk cools too much and the butter starts to solidify.

    Place chicken in a 9x13 inch baking dish coated with cooking spray. Bake uncovered at 350 for 35 minutes. Sprinkle with chopped parsley, if desired. Yield: 6 servings.

    Note: Chicken can be frozen after rolling in coating mixture. Remove from freezer; arrange in sprayed pan. Bake unthawed at 400 degrees for 30 minutes; reduce heat to 350 degrees for an additional 15 to 20 minutes
