citrus chicken and rice

A real family pleaser that is quick and easy to make. I have found that the steam baking tends to remove the browning color from the chicken. Don't know if I just need to brown it deeper of if this will always. Whatever the cause it doesn't hurt the flavors at all. Try placing sauteed orange slices on top as it just adds a nice touch.

Ingredients

  • 4 - boneless skinless chicken breasts
  • 1 3/4 cups chicken broth
  • 1/2 cup orange juice
  • 1/2 cup chopped onion
  • 1 cup uncooked long-grain white rice. well rinsed
  • 3 tablespoons chopped fresh parsley. optional

How To Make citrus chicken and rice

  • Step 1
    Cook chicken over medium high heat (10 minutes or until brown). Set aside.
  • Step 2
    Add broth, juice, onion and rice to same pan. Cover and cook over low heat: 10 minutes.
  • Step 3
    Return chicken to skillet. Cover and cook 10 minutes or until chicken and rice are cooked.
  • Step 4
    Stir in parsley prior to serving.
