A great cook, by the name of Terrie Hoelscher shared a similar recipe on JAP. I used hers as a base and tweaked it. This is an amazing casserole. Enjoy!

    celery stalks (chopped)
  • 1
    onion (medium-diced)
  • 2 Tbsp
  • 2 c
    roasted chicken (chopped)
  • 1 can(s)
    chop suey vegetables (14 oz)
  • 1 can(s)
    water chestnuts (small can)
  • 3 Tbsp
    soy sauce
  • 3 can(s)
    cream of mushroom soup
  • 1/2 c
    chicken broth
  • 3/4 c
    half & half
  • 1 1/2 c
    chow mein noodles
  • 1 1/2 c
    whole cashews (roasted)
  • 3 c
    white rice (cooked)

How to Make Christy's Cashew Chicken Casserole


  1. Preheat oven to 350.
  2. In a large skillet, saute celery and onion in butter until tender and translucent.
  3. Add remaining ingredients (except rice) and simmer on low for about 15 minutes.
  4. Pour in 13x9 pan. Sprinkle with a handful of chow mein noodles and cashews and bake for 40 minutes.
  5. Prepare rice according to package.
  6. Let casserole cool down for about 10 minutes and serve over rice.
