A great cook, by the name of Terrie Hoelscher shared a similar recipe on JAP. I used hers as a base and tweaked it. This is an amazing casserole. Enjoy!

onion (medium-diced)
2 Tbsp
butter

roasted chicken (chopped)
1 can(s)
chop suey vegetables (14 oz)
1 can(s)
water chestnuts (small can)
3 Tbsp
soy sauce
3 can(s)
cream of mushroom soup
1/2 c
chicken broth
3/4 c
half & half
1 1/2 c
chow mein noodles
1 1/2 c
whole cashews (roasted)
3 c
white rice (cooked)

How to Make Christy's Cashew Chicken Casserole

Step-by-Step

  • 1Preheat oven to 350.
  • 2In a large skillet, saute celery and onion in butter until tender and translucent.
  • 3Add remaining ingredients (except rice) and simmer on low for about 15 minutes.
  • 4Pour in 13x9 pan. Sprinkle with a handful of chow mein noodles and cashews and bake for 40 minutes.
  • 5Prepare rice according to package.
  • 6Let casserole cool down for about 10 minutes and serve over rice.
