Ingredients
- 3 - links, chorizo spanish sausage, cut into chunks
- 2 tablespoons olive oil
- 1-1/4 pound boneless, skinless chicken thighs, cut into 1"-pieces
- 1 - sonion, dicedalt and pepper to taste
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 - 28 oz can whole, peeled tomatoes
- 1 - 15 oz can black beans, drained
- 1 teaspoon chipotle chili peppers in adobo sauce. chopped
- - sour cream, garnish
- - shredded mexican cheese, garnish
How To Make chorizo-chicken chili

Step 1In food processor or blender, pulse sausage until it resembles ground meat. Heat oil in lg pot over med-high heat. Seaon chicken w/ salt and pepper.

Step 2Cook chicken in batches until browned.remove chicken. Reduce heat to medium, add onions and sausage. Cook until onions are soft and meat is browned. Stir in chili powder, chili pepper in adobo sauce and cumin.

Step 3Add tomatoes, breaking them up w/ a fork or spoon. Add chicken and 1/2 cup water. Bring to a simmer. reduce heat and cook, stirring occasioanlly for 20 mins. Srve w/ a sprinkling of cheese and a dollop of sour cream.
