chipotle turkey chili

At first, I always thought regular chili only, anything else is just weird. Then I tried it....

Ingredients

  • 1 pound ground turkey
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen corn, thawed
  • 1 - 15 oz. cans cannellini beans, undrained
  • 1/2 cup chicken broth, low salt
  • 1/4 teaspoon salt
  • 1 - chipotle chili pepper in adobo sauce, finely chopped
  • 2 - 8 oz. packages sour cream, reduced fat
  • 1/2 cup cilantro, fresh, chopped
  • - colby monterey jack cheese blend

How To Make chipotle turkey chili

  • Step 1
    In a 4 qt saucepan, cook turkey, onion & garlic over medium high heat, 4 - 6 minutes, stirring occasionally, until turkey is no longer pink, drain.
  • Step 2
    Stir in corn, beans, broth, salt & chile. Heat to boiling. Reduce heat to medium; cover & simmer 10 - 15 minutes to blend flavors, stirring occasionally.
  • Step 3
    Stir in 1 - 8 oz. container of sour cream & 1/4 C of the cilantro. Serve with remaining 8 oz. sour cream & 1/4 C cilantro & the cheese.
