Ingredients
- 4 - chicken breast filets
- 1 1/4 cups homemade chicken stock
- 3 tablespoons cornstarch
- 3 tablespoons sherry
- 2 tablespoons soy sauce, light
- 1 tablespoon rice vinegar
- 1 tablespoon hot pepper oil
- 1 tablespoon ginger, finely grated
- 3 - minced garlic cloves
- 1 tablespoon sesame oil
- 8 ounces fresh mushrooms, sliced
- 1 cup red bell pepper, diced
- 3/4 cup sliced green onions
- 1/3 cup pecan, unsalted dry roasted halves
How To Make chinese chicken stir fry

Step 1Rinse chicken and pat dry.

Step 2Cut into 1-inch cubes. Set aside.

Step 3In a small bowl, combine broth, cornstarch, sherry, soy sauce and vinegar.

Step 4Set aside.

Step 5Heat hot pepper oil in a nonstick skillet or wok over high heat.

Step 6Add ginger and garlic and saute 1 minute.

Step 7Add chicken and stir-fry until lightly browned.

Step 8Transfer chicken to plate and set-aside.

Step 9Add sesame oil to skillet.

Step 10Stir in mushrooms and pepper.

Step 11Cover pan, reduce heat and steam 5-7 minutes.

Step 12Add chicken broth mixture.

Step 13Return chicken to pan and cook until sauce is thickened.

Step 14Add onions and pecans and cook 2 minutes more.

Step 15Serve over rice if desired.
