chicken breast filets
1 1/4 c
homemade chicken stock
3 Tbsp
3 Tbsp
2 Tbsp
soy sauce, light
1 Tbsp
rice vinegar
1 Tbsp
hot pepper oil
1 Tbsp
ginger, finely grated
minced garlic cloves
1 Tbsp
sesame oil
8 oz
fresh mushrooms, sliced
1 c
red bell pepper, diced
3/4 c
sliced green onions
1/3 c
pecan, unsalted dry roasted halves

How to Make Chinese Chicken Stir Fry


  • 1Rinse chicken and pat dry.
  • 2Cut into 1-inch cubes. Set aside.
  • 3In a small bowl, combine broth, cornstarch, sherry, soy sauce and vinegar.
  • 4Set aside.
  • 5Heat hot pepper oil in a nonstick skillet or wok over high heat.
  • 6Add ginger and garlic and saute 1 minute.
  • 7Add chicken and stir-fry until lightly browned.
  • 8Transfer chicken to plate and set-aside.
  • 9Add sesame oil to skillet.
  • 10Stir in mushrooms and pepper.
  • 11Cover pan, reduce heat and steam 5-7 minutes.
  • 12Add chicken broth mixture.
  • 13Return chicken to pan and cook until sauce is thickened.
  • 14Add onions and pecans and cook 2 minutes more.
  • 15Serve over rice if desired.
