    chicken breast filets
  • 1 1/4 c
    homemade chicken stock
  • 3 Tbsp
  • 3 Tbsp
  • 2 Tbsp
    soy sauce, light
  • 1 Tbsp
    rice vinegar
  • 1 Tbsp
    hot pepper oil
  • 1 Tbsp
    ginger, finely grated
  • 3
    minced garlic cloves
  • 1 Tbsp
    sesame oil
  • 8 oz
    fresh mushrooms, sliced
  • 1 c
    red bell pepper, diced
  • 3/4 c
    sliced green onions
  • 1/3 c
    pecan, unsalted dry roasted halves

How to Make Chinese Chicken Stir Fry


  1. Rinse chicken and pat dry.
  2. Cut into 1-inch cubes. Set aside.
  3. In a small bowl, combine broth, cornstarch, sherry, soy sauce and vinegar.
  4. Set aside.
  5. Heat hot pepper oil in a nonstick skillet or wok over high heat.
  6. Add ginger and garlic and saute 1 minute.
  7. Add chicken and stir-fry until lightly browned.
  8. Transfer chicken to plate and set-aside.
  9. Add sesame oil to skillet.
  10. Stir in mushrooms and pepper.
  11. Cover pan, reduce heat and steam 5-7 minutes.
  12. Add chicken broth mixture.
  13. Return chicken to pan and cook until sauce is thickened.
  14. Add onions and pecans and cook 2 minutes more.
  15. Serve over rice if desired.
