Ingredients

  • 4 - chicken breast filets
  • 1 1/4 cups homemade chicken stock
  • 3 tablespoons cornstarch
  • 3 tablespoons sherry
  • 2 tablespoons soy sauce, light
  • 1 tablespoon rice vinegar
  • 1 tablespoon hot pepper oil
  • 1 tablespoon ginger, finely grated
  • 3 - minced garlic cloves
  • 1 tablespoon sesame oil
  • 8 ounces fresh mushrooms, sliced
  • 1 cup red bell pepper, diced
  • 3/4 cup sliced green onions
  • 1/3 cup pecan, unsalted dry roasted halves

How To Make chinese chicken stir fry

  • Step 1
    Rinse chicken and pat dry.
  • Step 2
    Cut into 1-inch cubes. Set aside.
  • Step 3
    In a small bowl, combine broth, cornstarch, sherry, soy sauce and vinegar.
  • Step 4
    Set aside.
  • Step 5
    Heat hot pepper oil in a nonstick skillet or wok over high heat.
  • Step 6
    Add ginger and garlic and saute 1 minute.
  • Step 7
    Add chicken and stir-fry until lightly browned.
  • Step 8
    Transfer chicken to plate and set-aside.
  • Step 9
    Add sesame oil to skillet.
  • Step 10
    Stir in mushrooms and pepper.
  • Step 11
    Cover pan, reduce heat and steam 5-7 minutes.
  • Step 12
    Add chicken broth mixture.
  • Step 13
    Return chicken to pan and cook until sauce is thickened.
  • Step 14
    Add onions and pecans and cook 2 minutes more.
  • Step 15
    Serve over rice if desired.
