This recipe came from one of my many friends, Peggy. This is a very yummy dish and so quick and easy to prepare...can't beat that with a stick! Guess the rice and water chestnuts warrents it to be called "Chinese".

Ingredients

  • 2 c
    cooked chicken, cube & debone
  • 3/4 c
    celery, diced
  • 1 c
    cooked rice
  • 3/4 c
    mayonnaise
  • 1/4 c
    onions, chopped
  • 1 tsp
    lemon juice
  • 1 tsp
    salt
  • 1 can(s)
    cream of chicken soup
  • 4 oz
    sliced water chestnuts, drain
  • 1 c
    fresh mushrooms, sliced
  • TOPPING:

  • 1/2 c
    butter or margarine, melted
  • 1/2 c
    slivered almonds
  • 1 c
    corn flakes

How to Make Chinese Chicken

Step-by-Step

  1. Preheat oven to 350. Mix first 10 ingredients together and pour into a 2-quart casserole dish.
  2. Topping: melt butter then add almonds and corn flakes. Toss to coat then sprinkle on top of first mixture.
  3. Bake at 350 for approximately 35 minutes.
