OK, all you garlic lovers, here's your dish! Modified this from a recipe I saw in a local magazine, and found it to be exceptionally tasty. I used chicken tenders, but any cut would work.

Ingredients

  • MARINATE
  • 2 - limes, juiced
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • CHIMICHURRI SAUCE
  • 1 bunch cilantro, fresh
  • 6-8 cloves garlic
  • 1 teaspoon salt
  • 1 - lime, zested and juiced
  • 5 tablespoons olive oil
  • MEAT
  • 4-6 - chicken breast halves, skinless and boneless or equivilent chicken tenders

How To Make chimichurri chicken

  • Step 1
    Prepare marinate by whisking together lime juice and next five ingredients.
  • Step 2
    Combine marinate and chicken in a large bowl, cover and chill for two hours.
  • Step 3
    Prepare sauce by processing all ingredients in a food processor until smooth.
  • Step 4
    Remove chicken from marinate and discard marinate. Grill chicken over medium-high heat, until juices run clear, about 4-5 minutes per side.
