Ingredients

  • 3 cups chopped chicken breasts
  • 1/3 cup green onions, chopped with tops
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1/2 cup jack cheese, grated
  • 2/3 cup picante sauce
  • 1 teaspoon cumin
  • 8 - flour tortillas
  • 1/2 cup shredded cheddar cheese

How To Make chimichangas

  • Step 1
    Combine chicken, sauce, onion, cumin, oregano and salt in a saucepan.
  • Step 2
    Simmer 5 minutes or until most of liquid has evaporated.
  • Step 3
    Brush one side of tortillas with butter.
  • Step 4
    Spoon about 1/2 cup of mixture on unbuttered side of tortilla.
  • Step 5
    Top with cheese, fold over and bake in a dish for about 15 minutes.
