  • 1 small
    chopped onion
  • 1 Tbsp
  • 3 clove
    minced garlic
  • 2 c
  • 1 1/2 tsp
    chili powder
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
  • pinch
  • 2 1/2 c
    cooked shredded chicken or turkey
  • 8
    12" flour tortillas
  • 1 c
    refried beans

How to Make Chimichangas


  1. Saute onion and garlic until tender, add salsa, chili powder, cumin, cinnamon and salt. Fold in chicken, remove from heat and set aside. Spoon 2 T beans down center of each tortilla, top with scant 1/2 c chicken m ixture. Fold top and bottom, then roll. Secure with wooden toothpicks if necessary. Place in 9x13 seam down. Bake at 450 degrees 20-25 min or until golden brown and crisp, turning and respraying pan after 10 min.
