chilled chicken ranch salad

This is another of those recipes made just because I didn't want to go to the store. I had some leftover baked chicken, so I decided to see what I had to make a salad. I'm not a fan of mayonnaise baked salads, so I decided to use sour cream and I think it gives it a better flavor.

Ingredients
- 3 medium chicken breasts, boneless and skinless
- 1/4 cup pickles, diced
- 3 tablespoons dry ranch dressing mix
- 1 1/4 cups sour cream, lite
How To Make chilled chicken ranch salad

Step 1Preheat oven to 350 degrees. Bake chicken in oven-safe dish for 30 minutes. Cool completely and shred.

Step 2In a medium mixing bowl, combine chicken, diced pickles, and ranch dressing mix until evenly distributed. Stir in sour cream until well moxed. Cover and chill for at least 1 hour.

Step 3Serve with toasted bread, crackers, or lettuce leaves.

Step 4Note: If you do not have dry ranch dressing mix, prepared ranch dressing can be substituted. Simply decrease the amount of sour cream by 1/4 cup.
