Really good wrapped in tortillas with onions, peppers & mexican blend cheese.

Ingredients

  • 1 tablespoon chili powder
  • 1 teaspoon chili powder
  • 1 1/4 teaspoons salt
  • 1 teaspoon coriander
  • 1 teaspoon oregano, dried
  • 1 teaspoon garlic powder
  • 6 - 7 pounds roasting chicken
  • 1 tablespoon olive oil, extra virgin
  • 2 - limes
  • 1 small green bell pepper, cut into 1/2
  • 1 small red bell pepper, cut into 1/2
  • 1 small yellow bell pepper, cut into 1/2
  • 1 large onion, cut into 1/2
  • 2 tablespoons cilantro, fresh
  • 6 - 8 - flour tortillas
  • - mexican blend shredded cheese
  • - sour cream

How To Make chili lime roast chicken fajitas

  • Step 1
    Preheat oven to 350 degrees F. In a small bowl, combine chili powder, 1 tsp salt, coriander, oregano & garlic powder.
  • Step 2
    Quarter 1 lime; place in chicken cavity.
  • Step 3
    Place chicken in large roating pan. Brush chicken with oil.
  • Step 4
    Sprinkle chicken with spice mixture. Roast 1 hour.
  • Step 5
    Meanwhile, grate 1 tsp zest & squeeze 3 Tbsp juice from remaining lime into large bowl. Add peppers, onion & remaining 1/4 tsp salt; toss to coat. Let pepper mixture stand at room temperature while chicken is roasting.
  • Step 6
    Arrange pepper mixture around chicken in pan. Continue roasting until chicken is no longer pink near bones, about 1 hour.
  • Step 7
    Debone chicken into container with pan drippings. Toss pepper mixture with cilantro; add to another containerr. Heat tortillas according to package directions. Serve chicken & peppers with pan juices, cheese, sour cream & tortillas.
