Ingredients
- 1 tablespoon chili powder
- 1 teaspoon chili powder
- 1 1/4 teaspoons salt
- 1 teaspoon coriander
- 1 teaspoon oregano, dried
- 1 teaspoon garlic powder
- 6 - 7 pounds roasting chicken
- 1 tablespoon olive oil, extra virgin
- 2 - limes
- 1 small green bell pepper, cut into 1/2
- 1 small red bell pepper, cut into 1/2
- 1 small yellow bell pepper, cut into 1/2
- 1 large onion, cut into 1/2
- 2 tablespoons cilantro, fresh
- 6 - 8 - flour tortillas
- - mexican blend shredded cheese
- - sour cream
How To Make chili lime roast chicken fajitas

Step 1Preheat oven to 350 degrees F. In a small bowl, combine chili powder, 1 tsp salt, coriander, oregano & garlic powder.

Step 2Quarter 1 lime; place in chicken cavity.

Step 3Place chicken in large roating pan. Brush chicken with oil.

Step 4Sprinkle chicken with spice mixture. Roast 1 hour.

Step 5Meanwhile, grate 1 tsp zest & squeeze 3 Tbsp juice from remaining lime into large bowl. Add peppers, onion & remaining 1/4 tsp salt; toss to coat. Let pepper mixture stand at room temperature while chicken is roasting.

Step 6Arrange pepper mixture around chicken in pan. Continue roasting until chicken is no longer pink near bones, about 1 hour.

Step 7Debone chicken into container with pan drippings. Toss pepper mixture with cilantro; add to another containerr. Heat tortillas according to package directions. Serve chicken & peppers with pan juices, cheese, sour cream & tortillas.
