Ingredients

  • MARINADE
  • 1/2 cup sesame oil
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon lime juice
  • 1/2 teaspoon fresh grated ginger
  • 1/4 teaspoon minced garlic
  • FOR THE KABOBS
  • 2 - boneless, skinless chicken breasts, cubed
  • 18 small cremini mushrooms
  • 1 large zucchini, cut in 1/4 inch round slices
  • 2 - red bell peppers , seeded and cut in chunks
  • 6 - skewers

How To Make chili-lime chicken kabobs

  • Step 1
    In a bowl, whisk the marinade ingredients together.
  • Step 2
    Add the chicken and stir to coat. Cover with plastic wrap and refrigerate for 6 hours.
  • Step 3
    If you are using wood skewers, soak them in water for 30 minutes before grilling.
  • Step 4
    When ready to grill, preheat the grill to high heat.
  • Step 5
    Thread chicken, mushrooms, peppers and zucchini on skewers alternately.
  • Step 6
    Brush the grill grate with oil.
  • Step 7
    Place the kabobs on the grill and cook for 15 minutes turning once, or until chicken is done.
