Not sure why this is called Chili Chicken, unless it's because of the peppers...this would probably be good without the peppers if your family doesn't go for the hot stuff.

1 large
bag wide egg noodles, cooked just until soft
1 small
2 Tbsp
3 can(s)
cream of mushroom soup
1 large
can sliced mushrooms, drained
1 large
jar diced pimento, drained
salt and pepper to taste
whole chicken, boiled, deboned
jalapeno peppers, seeds removed... as many as you like, according to your taste
1 lb
grated cheddar cheese (might want a little more.. enough to cover casserole twice


1Preheat over to 350*
2In a large sauce pan, saute onion in butter. Add soup, mushrooms, pimento, salt and pepper.
3Spray large casserole dish with non-stick spray. Layer (twice): noodles, chicken, peppers, soup mixture and cheese.
4Cover and bake for 30 to 45 minutes until hot and bubbly.
