Ingredients

whole chicken, cooked, skinned, deboned and cubed
1 c
onion, chopped
1 medium
green bell pepper, chopped
2
garlic cloves, minced
2 Tbsp
oil
1 can(s)
15-oz pinto beans, drained
3/4 c
salsa (pace or other)
1 tsp
chili powder
1 tsp
ground cumin
1/2 tsp
salt
2 can(s)
14-1/2 oz stewed tomatoes

TOPPINGS (OPTIONAL)

cheddar cheese, shredded
green onions, chopped
avocados, diced
sour cream

Step-By-Step

1Cook and prepare chicken.

In a large soup pot saute onion, green pepper and garlic in oil until tender. Add chicken and heat through. Add remaining ingredients and simmer for 20 minutes. Ladle into bowls and top with any or all of the following ingredients.
