Ingredients For chicken with shallots and sundried tomatoes

6chicken breasts, boneless

1 Tbspsundried tomatoes, softened and chopped

1/2 cdry white wine

1.5 Tbspbutter
-
2-3 Tbspminced shallots

1 tspbasil
-
1 tspmarjoram
-
1 tspparsley
-
1 tspthyme
-
1/3 cheavy cream
-
1 lgminced garlic clove
-
1 Tbspolive oil
-
salt and pepper to taste
How To Make chicken with shallots and sundried tomatoes

1Cut chicken breast diagonally in 1/2\" strips.

2Melt butter and oil in heavy skillet on moderate heat.

3Increase heat, add chicken, 1/2 of the herbs, salt and pepper.

4Saute until opaque, set aside and keep warm.

5Add shallots and garlic to pan and saute quickly (1/2 minute).

6Reduce heat and add cream, wine, tomatoes, and the rest of the herbs.

7Bring to a boil, stirring until sauce thickens.

8Return chicken to pan and simmer 2-3 minutes until heated through.
