Ingredients

  • 6 chicken breasts, boneless
  • 1 tablespoon olive oil
  • 1 large minced garlic clove
  • 1/3 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1 teaspoon marjoram
  • 1 teaspoon basil
  • 2-3 tablespoons minced shallots
  • 1.5 tablespoons butter
  • 1/2 cup dry white wine
  • 1 tablespoon sundried tomatoes, softened and chopped
  • salt and pepper to taste

How To Make chicken with shallots and sundried tomatoes

  • Step 1
    Cut chicken breast diagonally in 1/2\" strips.
  • Step 2
    Melt butter and oil in heavy skillet on moderate heat.
  • Step 3
    Increase heat, add chicken, 1/2 of the herbs, salt and pepper.
  • Step 4
    Saute until opaque, set aside and keep warm.
  • Step 5
    Add shallots and garlic to pan and saute quickly (1/2 minute).
  • Step 6
    Reduce heat and add cream, wine, tomatoes, and the rest of the herbs.
  • Step 7
    Bring to a boil, stirring until sauce thickens.
  • Step 8
    Return chicken to pan and simmer 2-3 minutes until heated through.
