    chicken breasts, boneless
  • 1 Tbsp
    olive oil
  • 1 large
    minced garlic clove
  • 1/3 c
    heavy cream
  • 1 tsp
  • 1 tsp
  • 1 tsp
  • 1 tsp
  • 2-3 Tbsp
    minced shallots
  • 1.5 Tbsp
  • 1/2 c
    dry white wine
  • 1 Tbsp
    sundried tomatoes, softened and chopped
  • ·
    salt and pepper to taste

How to Make Chicken with Shallots and Sundried Tomatoes


  1. Cut chicken breast diagonally in 1/2" strips.
  2. Melt butter and oil in heavy skillet on moderate heat.
  3. Increase heat, add chicken, 1/2 of the herbs, salt and pepper.
  4. Saute until opaque, set aside and keep warm.
  5. Add shallots and garlic to pan and saute quickly (1/2 minute).
  6. Reduce heat and add cream, wine, tomatoes, and the rest of the herbs.
  7. Bring to a boil, stirring until sauce thickens.
  8. Return chicken to pan and simmer 2-3 minutes until heated through.
