Ingredients

  • 1 yellow bell pepper, chopped small
  • 2 tablespoons chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1/4 cup fresh parsley
  • 1/2 lemon
  • 4 bone-in chicken thighs
  • salt and pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • juice of 1 orange
  • 4 tablespoons honey

How To Make chicken with roasted yellow bell pepper sauce

  • Step 1
    Juice the lemon. Add the juice, the yellow bell pepper, red onion, garlic, smoked paprika, and parsley to a bowl and mix well. Season the chicken with salt and pepper and add to the marinade. Marinate the chicken for about 30 minutes.
  • Step 2
    Add the oil and butter to saucepan. Remove the chicken from the marinade and reserve the marinade. Cook the chicken in the butter oil mixture until browned on both sides. Remove from the pan and set aside.
  • Step 3
    Drain the marinade, reserving the juice. Place the solids in the chicken fat in the pan. Cook 5 minutes. Add orange juice and the honey to the drained juice from the marinade. Pour into the pan cook `1 minute.
  • Step 4
    Add the chicken back in and lower the heat. Cook, covered, for about 10 minutes. Remove the cover and cook another 10 minutes. Serve with the sauce.
