chicken with roasted shallots, tomatoes and white beans

I like the combination of flavors in this recipe. The white beans really are good mixed with the other ingredients. I added the roasted red peppers myself, it gives the recipe a pretty color. We make this recipe all the time. It is one of Robin Miller's recipes. I used her picture for this recipe.

Ingredients

  • 4 - boneless skinless chicken breast halves
  • - salt and pepper to taste
  • 4 - shallots, cut into 1 inch pieces
  • 2 cups grape or cherry tomatoes, halved
  • - olive oil
  • 1 - (15-ounce) can white beans, drained
  • 1,1/4 cup chicken broth, divided
  • 1 teaspoon freshly chopped parsley leaves
  • 1/2 cup roasted red peppers in a jar diced

How To Make chicken with roasted shallots, tomatoes and white beans

  • Step 1
    Cook chicken in olive oil until done on both sides seasoned with salt and pepper. After done set aside and cook shallots, roasted red peppers, tomatoes until tender and add 1 cup of broth. Add the beans and 1/4 cup chicken broth and simmer until the juices are cooked down some. Pour over chicken in a serving platter and serve topped with fresh parsley.
