I like the combination of flavors in this recipe. The white beans really are good mixed with the other ingredients. I added the roasted red peppers myself, it gives the recipe a pretty color. We make this recipe all the time. It is one of Robin Miller's recipes. I used her picture for this recipe.

boneless skinless chicken breast halves
salt and pepper to taste
shallots, cut into 1 inch pieces
2 c
grape or cherry tomatoes, halved
olive oil
(15-ounce) can white beans, drained
1,1/4 c
chicken broth, divided
1 tsp
freshly chopped parsley leaves
1/2 c
roasted red peppers in a jar diced

How to Make Chicken with Roasted Shallots, Tomatoes and White Beans


  • 1Cook chicken in olive oil until done on both sides seasoned with salt and pepper. After done set aside and cook shallots, roasted red peppers, tomatoes until tender and add 1 cup of broth. Add the beans and 1/4 cup chicken broth and simmer until the juices are cooked down some. Pour over chicken in a serving platter and serve topped with fresh parsley.
