chicken with roasted shallots, tomatoes and white beans
I like the combination of flavors in this recipe. The white beans really are good mixed with the other ingredients. I added the roasted red peppers myself, it gives the recipe a pretty color. We make this recipe all the time. It is one of Robin Miller's recipes. I used her picture for this recipe.

Ingredients
- 4 - boneless skinless chicken breast halves
- - salt and pepper to taste
- 4 - shallots, cut into 1 inch pieces
- 2 cups grape or cherry tomatoes, halved
- - olive oil
- 1 - (15-ounce) can white beans, drained
- 1,1/4 cup chicken broth, divided
- 1 teaspoon freshly chopped parsley leaves
- 1/2 cup roasted red peppers in a jar diced
How To Make chicken with roasted shallots, tomatoes and white beans

Step 1Cook chicken in olive oil until done on both sides seasoned with salt and pepper. After done set aside and cook shallots, roasted red peppers, tomatoes until tender and add 1 cup of broth. Add the beans and 1/4 cup chicken broth and simmer until the juices are cooked down some. Pour over chicken in a serving platter and serve topped with fresh parsley.
