I like the combination of flavors in this recipe. The white beans really are good mixed with the other ingredients. I added the roasted red peppers myself, it gives the recipe a pretty color. We make this recipe all the time. It is one of Robin Miller's recipes. I used her picture for this recipe.
Ingredients

4boneless skinless chicken breast halves

·salt and pepper to taste

4shallots, cut into 1 inch pieces

2 cgrape or cherry tomatoes, halved

·olive oil

1(15-ounce) can white beans, drained

1,1/4 cchicken broth, divided

1 tspfreshly chopped parsley leaves

1/2 croasted red peppers in a jar diced
How to Make Chicken with Roasted Shallots, Tomatoes and White Beans
- Cook chicken in olive oil until done on both sides seasoned with salt and pepper. After done set aside and cook shallots, roasted red peppers, tomatoes until tender and add 1 cup of broth. Add the beans and 1/4 cup chicken broth and simmer until the juices are cooked down some. Pour over chicken in a serving platter and serve topped with fresh parsley.
