chicken with pear and red onion sauce
My husband is very fond of chicken...cooked in any form! I am fond of fruit and sauces in most any form. This recipe was created using all three of those ingredients. It has a sweet flavor with a touch of spice from the Sesame Oil. Serve it with plain rice or Skillet Confetti Corn (fresh).

Ingredients
- 6 - chicken breasts (or 4 large breasts)
- 2 tablespoons lemon pepper
- 1 teaspoon natures seasoning
- 1/4 teaspoon kosher salt
- 2 - 3 tablespoons olive oil, light
- 1/2 teaspoon sesame oil
- 1 teaspoon garlic, minced
- PEAR AND RED ONION SAUCE
- 2 tablespoons butter
- 2 tablespoons brown sugar, light
- 2 tablespoons honey
- 1 teaspoon lemon juice, fresh
- 3/4 cup chicken stock
- 1 - red onion, sliced
- 2 - pears, peeled, cored and sliced lengthwise
How To Make chicken with pear and red onion sauce

Step 1Combine together in a small bowl lemon pepper, Nature's Seasoning, and Kosher salt. Rub on the chicken breasts. Heat (medium) olive oil in a skillet; add chicken breasts and brown on both sides. Add garlic and sesame oil; continue cooking for 1 to 2 minutes releasing the flavor of the garlic. Remove chicken breasts from the skillet.

Step 2Mix together chicken stock, brown sugar, honey, and lemon juice in a bowl. Melt butter in the chicken drippings. Add red onions and sliced pears; saute for several minutes. Pour sauce mixture into the pan, stirring well. Add chicken breasts to the sauce. Reduce heat to low; cook approximately 25 to 30 minutes. Stir occasionally until chicken is thoroughly cooked and sauce is thickened. Serve.
