Chicken with Pear and Red Onion Sauce

My husband is very fond of chicken...cooked in any form! I am fond of fruit and sauces in most any form. This recipe was created using all three of those ingredients. It has a sweet flavor with a touch of spice from the Sesame Oil. Serve it with plain rice or Skillet Confetti Corn (fresh).

Ingredients

  • 6
    chicken breasts (or 4 large breasts)
  • 2 Tbsp
    lemon pepper
  • 1 tsp
    natures seasoning
  • 1/4 tsp
    kosher salt
  • 2 - 3 Tbsp
    olive oil, light
  • 1/2 tsp
    sesame oil
  • 1 tsp
    garlic, minced
  • PEAR AND RED ONION SAUCE

  • 2 Tbsp
    butter
  • 2 Tbsp
    brown sugar, light
  • 2 Tbsp
    honey
  • 1 tsp
    lemon juice, fresh
  • 3/4 c
    chicken stock
  • 1
    red onion, sliced
  • 2
    pears, peeled, cored and sliced lengthwise

How to Make Chicken with Pear and Red Onion Sauce

Step-by-Step

  1. Combine together in a small bowl lemon pepper, Nature's Seasoning, and Kosher salt. Rub on the chicken breasts. Heat (medium) olive oil in a skillet; add chicken breasts and brown on both sides. Add garlic and sesame oil; continue cooking for 1 to 2 minutes releasing the flavor of the garlic. Remove chicken breasts from the skillet.
  2. Mix together chicken stock, brown sugar, honey, and lemon juice in a bowl. Melt butter in the chicken drippings. Add red onions and sliced pears; saute for several minutes. Pour sauce mixture into the pan, stirring well. Add chicken breasts to the sauce. Reduce heat to low; cook approximately 25 to 30 minutes. Stir occasionally until chicken is thoroughly cooked and sauce is thickened. Serve.
