chicken with peanut curry sauce
This is a really fast easy curry recipe without the spiciness of traditional curry dishes.. This is one of my 11 year sons favorite recipes. He likes to help make this dish with me as well.

Ingredients
- 2 tablespoons canola oil
- 1 1/2 pounds chicken breasts, cut into small pieces
- 8 ounces frozen cut green beans
- PEANUT CURRY SAUCE
- 1 1/2 cups coconut milk
- 1/2 cup low sodium chicken broth
- 1 tablespoon red curry paste
- 1/3 cup chunky peanut butter
- 2 tablespoons brown sugar
- 2 tablespoons frsh squeezed lime juice
How To Make chicken with peanut curry sauce

Step 1Heat oil in a large frying pan over medium heat. Add cut up chicken pieces, saute until cooked through (abut 5 mins.) Add green beans and continue cooking for 3 more minutes.

Step 2While the chicken cooks, start the peanut curry sauce.

Step 3In a medium mixing bowl, whisk together all the sauce ingredients. Pour over the chicken & green beans; stir to combine. Turn the heat to high and bring to a boil. Stir occasionally. Reduce heat and simmer until sauce is thickened (about 6-8 mins.)

Step 4Serve chicken over rice.
