Chicken with Peanut Curry Sauce

2 Tbspcanola oil
1 1/2 lbchicken breasts, cut into small pieces
8 ozfrozen cut green beans
PEANUT CURRY SAUCE
1 1/2 ccoconut milk
1/2 clow sodium chicken broth
1 Tbspred curry paste
1/3 cchunky peanut butter
2 Tbspbrown sugar
2 Tbspfrsh squeezed lime juice
How to Make Chicken with Peanut Curry Sauce
- Heat oil in a large frying pan over medium heat. Add cut up chicken pieces, saute until cooked through (abut 5 mins.) Add green beans and continue cooking for 3 more minutes.
- While the chicken cooks, start the peanut curry sauce.
- In a medium mixing bowl, whisk together all the sauce ingredients. Pour over the chicken & green beans; stir to combine. Turn the heat to high and bring to a boil. Stir occasionally. Reduce heat and simmer until sauce is thickened (about 6-8 mins.)
- Serve chicken over rice.
