Chicken with Garlic Butter

olive oil
1.5 lb
chicken breasts, boneless and skinless
12 oz
mushrooms, cut in chunks
1 Tbsp
garlic cloves, minced
1/2 tsp
1/4 tsp
1 Tbsp
1/4 c
parsley, chopped
1/4 c
chicken stock


1Heat the oil in a wok or large skillet over high heat.
2Reduce the heat to medium high, add the chicken cubes and mushrooms and stir-fry, stirring constantly, for 3 minutes.
3Add the garlic, salt and pepper to the pan, and continue to stir-fry for 3 minutes more, stirring constantly, or until the chicken cubes are cooked through.
4Add the butter, parsley and chicken stock to the pan, stir-fry for 1 minute, and serve immediately.
