Ingredients
- 1 whole chicken
- 4 cloves garlic, minced
- 3 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1/2 cup white wine
- 2 tablespoons lemon juice
- 3 tablespoons butter
How To Make chicken with garlic and white wine butter sauce

Step 1Preheat the oven to 400 degrees F. Mix the garlic and parsley and rub into the chicken under the skin all over. Season the chicken with salt and pepper.

Step 2Place in a roasting pan. Drizzle the olive oil over the chicken and roast breast side down for 15 minutes.

Step 3Turn to the side and roast for 15 more minutes. Turn to the other side and roast 15 minutes. Turn to breast side up and about 45 minutes until no longer pink.

Step 4Remove the chicken to a carving board.

Step 5Strain the pan dripping through a fine mesh strainer into a degreaser. and place the pan dripping into a saucepan. Add the white wine and lemon juice. Bring to a boil and boil about 3 minutes. Whisk in the butter one pat at a time.

Step 6Carve the chicken and serve with the sauce over the pieces.
