    olive oil
  • 4 large
    chicken breasts, halves, boneless and skinless
  • ·
    "just a pinch" of salt
  • ·
    "just a pinch" of pepper
  • 2 Tbsp
    butter
  • 2
    pears, peeled and cored, thinly sliced
  • 2 tsp
    lemon juice
  • 1/4 c
    onion, minced
  • 1 large
    garlic clove, crushed
  • 1/2 c
    white wine, dry
  • 1/4 c
    chicken broth
  • 2 tsp
    honey
  • 1/4 tsp
    dried thyme, crushed
  • 1/2 c
    blueberries, fresh or frozen

How to Make Chicken with Fruit Sauce

Step-by-Step

  1. In a large skillet, heat the olive oil over medium-high heat; add the chicken and saute four to five minutes on each side until cooked through.
  2. Remove from the pan and keep warm.
  3. Melt 1 tablespoon of the butter in the pan.
  4. Add the pears and 1 teaspoon of lemon juice; saute until barely tender, about two to three minutes - Remove from the pan and set aside.
  5. In the same pan, cook the onion and garlic for one minute; add the wine and broth.
  6. Add the honey and thyme; boil until thickened, three to four minutes.
  7. Return the pears to the pan and add the blueberries; heat through, about two minutes.
  8. Swirl in the remaining tablespoon of butter and teaspoon of lemon juice.
  9. Serve the sauce over the chicken.
