Ingredients
- 1 cup long grain rice
- 1.25 cups chicken breasts, halves, boneless and skinless
- 1/2 cup paprika
- 1 teaspoon oregano
- 1/4 teaspoon pepper
- 1/4 cup butter
- 1 - chopped onion
- 2 - garlic cloves, finely chopped
- 1.5 cups milk
- 14 ounces tomatoes, canned whole, drained and cut up
- 6 ounces feta cheese
- 1/2 cup black olives, sliced
How To Make chicken with feta and tomatoes

Step 1Cook rice in 2 cups boiling water for 20 minutes.

Step 2Meanwhile, cut chicken into bite-sized cubes.

Step 3Combine flour with paprika and oregano.

Step 4Dust chicken cubes with flour mix lightly, reserving remaining flour mixture.

Step 5In a large deep skillet, melt half of the butter.

Step 6Cook chicken until lightly browned.

Step 7Remove and reserve.

Step 8Add remaining butter to pan.

Step 9Add onions and garlic.

Step 10Cook 3 minutes.

Step 11Sprinkle on 2 tablespoons remaining flour.

Step 12Cook 2 minutes.

Step 13Stir in milk.

Step 14Bring to a boil.

Step 15Add chicken pieces and cook 8-10 minutes.

Step 16Cut tomatoes into chunks.

Step 17Drain and dice feta cheese.

Step 18Add tomatoes and cheese to chicken.

Step 19Cook one minutes.

Step 20Taste and adjust seasoning if necessary.

Step 21Serve chicken over rice, sprinkle with olives.
