Chicken with Feta and Tomatoes
chicken breasts, halves, boneless and skinless
garlic cloves, finely chopped
tomatoes, canned whole, drained and cut up
black olives, sliced
How to Make Chicken with Feta and Tomatoes
1Cook rice in 2 cups boiling water for 20 minutes.
2Meanwhile, cut chicken into bite-sized cubes.
3Combine flour with paprika and oregano.
4Dust chicken cubes with flour mix lightly, reserving remaining flour mixture.
5In a large deep skillet, melt half of the butter.
6Cook chicken until lightly browned.
8Add remaining butter to pan.
11Sprinkle on 2 tablespoons remaining flour.
15Add chicken pieces and cook 8-10 minutes.
16Cut tomatoes into chunks.
17Drain and dice feta cheese.
18Add tomatoes and cheese to chicken.
20Taste and adjust seasoning if necessary.
21Serve chicken over rice, sprinkle with olives.
