Ingredients

  • 2 1/2 pounds chicken, cut up
  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped (approximately 1 1/2 cups)
  • 16 ounces tomato sauce
  • 1 teaspoon crushed dried red pepper, or to taste
  • 1 teaspoon salt
  • 1/4 teaspoon tabasco sauce
  • 2 cloves garlic, chopped
  • 1/2 ounce unsweetened baking chocolate, finely grated

How To Make chicken with chocolate

  • Step 1
    Soak chicken pieces in cold, salted water for about 10-15 minutes. Trim excess fat. Drain chicken pieces in colander. Pat dry with paper towel.
  • Step 2
    Heat oil in frying pan or electric skillet (300°F) over moderate heat. Brown chicken. When nicely browned, remove pieces to a Dutch oven or casserole with cover.
  • Step 3
    In the skillet in which you browned the chicken pieces, sauté onion, garlic, and bell pepper for 10 or 15 minutes on low heat.
  • Step 4
    Add remaining ingredients and mix well. Simmer about 5 minutes.
  • Step 5
    Spoon sauce over chicken pieces in Dutch oven or casserole. Bake at 350° for one hour.
