  • 2 1/2 lb
    chicken, cut up
  • 1/4 c
    olive oil
  • 1 large
    onion, chopped
  • 2 clove
    garlic, minced
  • 1
    green bell pepper, chopped (approximately 1 1/2 cups)
  • 16 oz
    tomato sauce
  • 1 tsp
    crushed dried red pepper, or to taste
  • 1 tsp
  • 1/4 tsp
    tabasco sauce
  • 2 clove
    garlic, chopped
  • 1/2 oz
    unsweetened baking chocolate, finely grated

How to Make Chicken with Chocolate


  1. Soak chicken pieces in cold, salted water for about 10-15 minutes. Trim excess fat. Drain chicken pieces in colander. Pat dry with paper towel.
  2. Heat oil in frying pan or electric skillet (300°F) over moderate heat. Brown chicken. When nicely browned, remove pieces to a Dutch oven or casserole with cover.
  3. In the skillet in which you browned the chicken pieces, sauté onion, garlic, and bell pepper for 10 or 15 minutes on low heat.
  4. Add remaining ingredients and mix well. Simmer about 5 minutes.
  5. Spoon sauce over chicken pieces in Dutch oven or casserole. Bake at 350° for one hour.
