Ingredients
- 4 tablespoons olive oil
- 2 - garlic cloves, minced
- - chicken, serving pieces for 6
- 1 - onion, chopped
- 1 - green bell pepper, chopped
- 3 slices pimentos, chopped and drained
- 2 large tomatoes, peeled, seeded and chopped
- 2 tablespoons chili powder
- 2.5 cups chicken broth
- 1/4 cup almonds, slivered
- 1/4 cup raisins
- 1/2 teaspoon cumin
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves, ground
- 1/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon sugar
- 1 - orange, grated rind only
- 2 - chocolate, unsweetened squares
- 1/4 cup light rum
How To Make chicken with chocolate sauce (chicken mole)

Step 1In casserole, heat oil and cook garlic for a few moments to flavor oil; add chicken and brown.

Step 2Remove chicken.

Step 3In remaining fat, cook onion, green pepper, pimento, and tomato over gentle heat for 10 minutes.

Step 4To onion mixture, add chili powder, blending well.

Step 5Add broth, almonds, raisins, seasonings, and rind; simmer, covered, 30 minutes longer.

Step 6Add chocolate, stirring until melted.

Step 7Replace chicken, spooning sauce over; bake, covered, at 350 degrees for 1 hour, or until chicken is tender.

Step 8Warm rum, ignite it, and pour over contents of casserole; allow to stand for a few minutes.
