chicken with apple cream sauce

I love this dish! I got this recipe from Taste of Home Magazine, I think...don't quote me on that...lol It's just yummy and satisfying! I hope you enjoy! *This sauce is great with pork tenderloin and chops as well... *I have added 1/2 can black beans (drained) to this sauce before... *Sauteed apples make a great side to this dish as well.

Ingredients
- 4 - boneless chicken breasts
- 1 tablespoon olive oil, light
- 1 cup apple juice, unsweetened
- 1 teaspoon lemon juice
- 1/4 teaspoon rosemary, dried and crushed
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon corn starch
- 1/2 cup heavy whipping cream (i used half milk)
- 1 tablespoon minced parsley, fresh
- - hot cooked rice, cooked in chicken stock (brown rice goes very well with this)
How To Make chicken with apple cream sauce

Step 1In a skillet, brown chicken in oil over medium heat for 4 min on each side. Combine the apple juice, lemon juice, rosemary, salt and pepper; pour over chicken.

Step 2Reduce heat, cover and simmer for 10 min or until chicken juices run clear. Remove chicken from pan and keep warm.

Step 3Combine cornstarch and cream until smooth, stir into cooking liquid in skillet. Bring to a boil, cook and stir for about 2 min or until thickened. Add parsley and return chicken back to skillet and heat through. Serve over rice.
