Chicken with Apple Cream Sauce

*This sauce is great with pork tenderloin and chops as well...
*I have added 1/2 can black beans (drained) to this sauce before...
*Sauteed apples make a great side to this dish as well.
4boneless chicken breasts
1 Tbspolive oil, light
1 capple juice, unsweetened
1 tsplemon juice
1/4 tsprosemary, dried and crushed
1/8 tspblack pepper
1 Tbspcorn starch
1/2 cheavy whipping cream (i used half milk)
1 Tbspminced parsley, fresh
·hot cooked rice, cooked in chicken stock (brown rice goes very well with this)
How to Make Chicken with Apple Cream Sauce
- In a skillet, brown chicken in oil over medium heat for 4 min on each side. Combine the apple juice, lemon juice, rosemary, salt and pepper; pour over chicken.
- Reduce heat, cover and simmer for 10 min or until chicken juices run clear. Remove chicken from pan and keep warm.
- Combine cornstarch and cream until smooth, stir into cooking liquid in skillet. Bring to a boil, cook and stir for about 2 min or until thickened. Add parsley and return chicken back to skillet and heat through. Serve over rice.
