Ingredients
- 2 boneless skinless chicken thighs cut into chunks
- 1 cup shiitake mushroom sliced and stemmed
- 1 small onion cut into rings
- 6 cloves garlic minced
- 2 tablespoons olive oil
- 2 tablespoons fresh ginger grated
- 2 tablespoons each soy sauce, fish sauce, & rice vinegar
- 3 tablespoons sugar
- 1 cup scallions chopped
- 1/4 cup fresh cilantro chopped

Step 1In a large skillet or wok add the oil. Add onion rings and garlic cook until softened. Add the mushrooms and chicken and cook until chicken is opaque

Step 2Stir in ginger then add the soy sauce, fish sauce, rice vinegar and sugar cook until sauce has reduced a bit . Remove from heat and add scallions and cilantro
