Ingredients
- 4 bone in chicken thighs
- salt and pepper
- 3 tablespoons ghee or butter
- 4 cloves garlic minced
- 1 large onion diced
- 2 tablespoons ground ginger
- 1 tablespoon each paprika and turmeric
- 2 teaspoons cumin, salt and ground mustard
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon cayenne pepper
- 1/4 cup brown sugar
- 2 tablespoons white vinegar
- 2 teaspoons lemon juice
- 2 tablespoons tamarind paste
- 2 cups water
How To Make chicken vindaloo

Step 1Salt and pepper the chicken. Heat the ghee or butter in a large skillet. Brown the chicken and remove to a Dutch oven. Leave the fat in the skillet.

Step 2Add the garlic and onion to the pan and saute until softened. Add the onion mixture to the pan with chicken. Mix all the spices together with the brown sugar.

Step 3Pour the spice mixture over the chicken then add the vinegar, lemon juice and tamarind paste. Stir in the water. Cover and simmer 20 minutes. Remove the cover and simmer for 10 more minutes to reduce the sauce and thicken it. Serve with Basmati rice and naan
