Season the chicken with salt and white pepper
Add oil to a large skillet. Add the chicken and cook until browned. Add the mushrooms and cook for 5 minutes. Add the flour and cook 2 minutes. Pour in the chicken stock and cream.

Add the Umami seasoning if using. Simmer 10 minutes. Add the shredded cheese and simmer until cheese is melted.

Serve over fettucine or egg noodles and garnish with parsley.
