chicken & veggie soup

I served it over rice, but you can enjoy it on its own. I created this recipe just for fun and it is loved by my husband. My kids have yet to try it since they are older & have moved out & on their own. But they sure do want try it.

Ingredients
- 1/2 medium white onion, chopped
- 1 tablespoon vegetable or canola oil
- 1/2 medium green bell pepper, chopped
- 2 medium chicken breasts, boneless and skinless, cooked
- 2 tablespoons self-rising flour
- 1 tablespoon lemon pepper seasoning
- 1c - vegetable boullion
- 2 ounces baby carrots chopped or sliced
- 2 cups chicken broth (can use water that chicken was cooked in)
- - juice from 1/2 lemon
How To Make chicken & veggie soup

Step 1Heat oil in medium pot on medium heat. Add onions & bell pepper. Saute until onions are clear.

Step 2Meanwhile, add the bouillon cube to the saved chicken broth and mix well.

Step 3Once the onion & bell pepper have been sauteed, add the flour stirring constantly til mixed well. Slowly pour the broth into the pot while stirring.

Step 4Lower you heat to Med-low.

Step 5Add the baby carrots, chopped chicken, lemon juice & lemon seasoning. Stir well.

Step 6Let cook over med-low or low until carrots are soft.
