I served it over rice, but you can enjoy it on its own. I created this recipe just for fun and it is loved by my husband. My kids have yet to try it since they are older & have moved out & on their own. But they sure do want try it.

1/2 medium
white onion, chopped
1 Tbsp
vegetable or canola oil
1/2 medium
green bell pepper, chopped
2 medium
chicken breasts, boneless and skinless, cooked
2 Tbsp
self-rising flour
1 Tbsp
lemon pepper seasoning
vegetable boullion
2 oz
baby carrots chopped or sliced
2 c
chicken broth (can use water that chicken was cooked in)
juice from 1/2 lemon


1Heat oil in medium pot on medium heat. Add onions & bell pepper. Saute until onions are clear.
2Meanwhile, add the bouillon cube to the saved chicken broth and mix well.
3Once the onion & bell pepper have been sauteed, add the flour stirring constantly til mixed well. Slowly pour the broth into the pot while stirring.
4Lower you heat to Med-low.
5Add the baby carrots, chopped chicken, lemon juice & lemon seasoning. Stir well.
6Let cook over med-low or low until carrots are soft.
