chicken tortilla soup

Typically I make this with chicken but hey....we have a lot of leftover turkey. This is a cheater dump and heat recipe that I came up with a few years ago when everyone in my house was sick with a bad cold. An exceptional way to use up that leftover turkey from Thanksgiving.

Ingredients

  • 1 - 2 pounds cooked chicken or turkey, chopped
  • 1 can sweet corn, drained
  • 1 can black beans, rinsed and drained
  • 32 ounces chicken stock
  • 24 ounces jar of salsa, medium heat (use the heat you like)
  • 1 teaspoon cumin
  • 4 ounces diced green chiles
  • 1 can crushed tomatoes
  • 1 - 3 tablespoons key lime juice (to taste)
  • - sour cream
  • - shredded cheddar cheese
  • - tortilla chips

How To Make chicken tortilla soup

  • Step 1
    Dump in the first seven in stock pot. Heat to boiling, simmer for about 15 minutes. Add lime juice one tablespoon at a time, to taste.
  • Step 2
    Put in a bowl and add sour cream, cheese and crushed tortilla chips to taste. Enjoy!
