Ingredients
- 1/4 cup olive oil, extra virgin
- 8 ounces assorted mushrooms, sliced
- 3 cloves garlic, minced
- 1 - 32. ounces chicken broth, low salt
- 1 - 14 oz. cans diced tomatoes with basil, garlic & oregano
- 2 - 9 oz. packages refrigerated chicken tortellini
- 1/3 cup julienned fresh basil
- 1/4 teaspoon black pepper
- 1/4 cup grated parmesan cheese
How To Make chicken tortellini soup with parmesan

Step 1Heat oil in large pot over medium heat until hot. Cook mushrooms & garlic 3 - 4 minutes or until mushrooms are softened. Stir in broth & tomatoes; bring to a boil. Add tortellini; simmer 9 - 10 minutes or until tortellini are tender, stirring occasionally.

Step 2Stir in basil & pepper; simmer 1 minute. Serve sprinkled with cheese.
