chicken tortellini pasta

I first had this at a hotel restaurant a few years ago and have been trying to find a recipe for it ever since. This one I adapted from about.com by adding chicken, and made for the first time tonight. I've already been requested to make it again! It is uh-maze-ing!! :)

Ingredients

  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 1 teaspoon chicken bouillon granules
  • 4 teaspoons dried leaf basil
  • 2 teaspoons fresh minced parsley
  • 1/4 teaspoon black pepper
  • 2 cups heavy cream
  • 4 tablespoons parmesan cheese
  • 1 pound cheese tortellini, cooked
  • 1 pound grilled chicken breast, cut into strips

How To Make chicken tortellini pasta

  • Step 1
    Make sure to cook tortellini and chicken first and set aside. I used pre-cut grilled chicken strips that take about 10 minutes in the skillet. Same for the tortellini
  • Step 2
    Blend the chicken granules, basil, 2 teaspoons parsley, and pepper into the crushed tomatoes
  • Step 3
    Saute the garlic in olive oil then add the tomato mixture and bring to a simmer. Add cream and bring to a gentle boil. Add the 4 tablespoons Parmesan cheese and stir well.
  • Step 4
    Stir the tortellini and chicken into the sauce. If desired, serve garnished with more parsley and/or parmesan cheese
