Ingredients
- 1 cup fresh spinach, chopped fine
- 1/2 cup quartered canned artichoke hearts, drained and chopped
- 3 tablespoons light mayonnaise
- 1/2 cup finely grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon pepper
- 2 tablespoons shredded mozzarella cheese
- 2 boneless skinless chicken breasts
- butter
- olive oil
How To Make chicken topped w/ spinach artichoke & parmesan dip

Step 1Combine spinach and artichokes in a medium bowl and mix well. Add mayo, half the Parmesan cheese, the garlic and onion powders, and the pepper. Once combined, add the shredded mozzarella cheese.

Step 2Halve each chicken breast to make 4 breast fillets. Add the butter and olive oil to a skillet and brown chicken breasts on both sides until well browned.

Step 3Drop approximately 1/4 cup of the spinach dip onto the top of each chicken breast and spread it out. Add about 1/4 cup water to the skillet and cover -- cook until chicken is cooked through. Add 1 Tbsp. Parmesan cheese to each breast.
