Ingredients For chicken topped w/ spinach artichoke & parmesan dip

  • 1 c
    fresh spinach, chopped fine
  • 1/2 c
    quartered canned artichoke hearts, drained and chopped
  • 3 Tbsp
    light mayonnaise
  • 1/2 c
    finely grated Parmesan cheese
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    onion powder
  • 1/4 tsp
  • 2 Tbsp
    shredded mozzarella cheese
  • 2
    boneless skinless chicken breasts
  • butter
  • olive oil

How To Make chicken topped w/ spinach artichoke & parmesan dip

    Combine spinach and artichokes in a medium bowl and mix well. Add mayo, half the Parmesan cheese, the garlic and onion powders, and the pepper. Once combined, add the shredded mozzarella cheese.

    Halve each chicken breast to make 4 breast fillets. Add the butter and olive oil to a skillet and brown chicken breasts on both sides until well browned.

    Drop approximately 1/4 cup of the spinach dip onto the top of each chicken breast and spread it out. Add about 1/4 cup water to the skillet and cover -- cook until chicken is cooked through. Add 1 Tbsp. Parmesan cheese to each breast.
