Ingredients

  • EMERIL'S ESSENCE CREOLE SEASONING
  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1-2 tablespoon olive oil
  • 4 - chicken thighs

How To Make chicken thighs

  • Step 1
    In a jar with a lid or an bowl, combine the first eight ingrediants. Mix well.(makes about 2/3 cup) Preheat oven 350 F
  • Step 2
    In a small bowl add the olive oil plus 1 Tbs of the ceole seasoning. Mix to form a paste. Brush the olive oil mixture on the skin side of the chicken.
  • Step 3
    Heat a cast iron grill pan until it smokes lightly. When hot place the chicken skin down first and cook for about 3-4minutes. Brush more olive oil mixture onto the other side of the chicken. Turn chicken over and cook for another 3-4 minutes.
  • Step 4
    Place the cast iron pan into the oven and cook for about 8 minutes of until the internal temperature reaches 165 degrees.
