Ingredients
- 8 large chicken thighs, bone-in, skin-on
- salt & freshly ground black pepper to taste
- 1/4 cup coconut oil (or vegetable oil)
- 1/4 cup tamari or low sodium soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 2 inch piece fresh ginger, peeled and minced
- 1 tablespoon ground coriander, toasted
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon curry powder
- 2 tablespoons unsalted butter
- PEANUT SAUCE
- 3/4 cup smooth peanut butter
- 1/2 cup hoisin sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon tamari or low sodium soy sauce
- 2 teaspoons toasted sesame oil
- 1 1" piece fresh ginger, peeled and minced
- pinch of red pepper flakes
How To Make chicken thighs with spicy peanut sauce

Step 1Remove excess fat from chicken thighs and with a sharp knife, score each piece by cutting deep into the chicken 1/2 inch apart. Season chicken with salt and pepper.

Step 2Mix together 2 tbsp. vegetable oil, tamari, honey, garlic, ginger, coriander, cayenne and curry powder - mix well. Place chicken in a resealable bag and pour marinade over making sure chicken is evenly coated. Marinate at room temperature for 1 hour or refrigerate if longer.

Step 3Preheat the oven to 400 degrees F. Remove the chicken from the marinade and pat dry. Melt butter and remaining oil in a large ovenproof skillet over medium-high heat. Brown the thighs in the skillet and then transfer to the oven. Bake, uncovered, turning once, for approximately 30 minutes or until cooked through.

Step 4Prepare peanut sauce ingredients and add 1/2 cup water. Blend until smooth.

Step 5Arrange chicken thighs on a platter and drizzle with peanut sauce. Serve remainder on the side.
