Ingredients For chicken thighs with spicy peanut sauce

  • 8 lg
    chicken thighs, bone-in, skin-on
  • salt & freshly ground black pepper to taste
  • 1/4 c
    coconut oil (or vegetable oil)
  • 1/4 c
    tamari or low sodium soy sauce
  • 2 Tbsp
    honey
  • 2 clove
    garlic, minced
  • 1
    2 inch piece fresh ginger, peeled and minced
  • 1 Tbsp
    ground coriander, toasted
  • 1/4 tsp
    cayenne pepper
  • 1/4 tsp
    curry powder
  • 2 Tbsp
    unsalted butter
  • PEANUT SAUCE
  • 3/4 c
    smooth peanut butter
  • 1/2 c
    hoisin sauce
  • 2 Tbsp
    fresh lime juice
  • 1 Tbsp
    tamari or low sodium soy sauce
  • 2 tsp
    toasted sesame oil
  • 1
    1" piece fresh ginger, peeled and minced
  • pinch of red pepper flakes

How To Make chicken thighs with spicy peanut sauce

    Remove excess fat from chicken thighs and with a sharp knife, score each piece by cutting deep into the chicken 1/2 inch apart. Season chicken with salt and pepper.

    Mix together 2 tbsp. vegetable oil, tamari, honey, garlic, ginger, coriander, cayenne and curry powder - mix well. Place chicken in a resealable bag and pour marinade over making sure chicken is evenly coated. Marinate at room temperature for 1 hour or refrigerate if longer.

    Preheat the oven to 400 degrees F. Remove the chicken from the marinade and pat dry. Melt butter and remaining oil in a large ovenproof skillet over medium-high heat. Brown the thighs in the skillet and then transfer to the oven. Bake, uncovered, turning once, for approximately 30 minutes or until cooked through.

    Prepare peanut sauce ingredients and add 1/2 cup water. Blend until smooth.

    Arrange chicken thighs on a platter and drizzle with peanut sauce. Serve remainder on the side.
