Ingredients
- 4 bone-in chicken thighs
- salt and pepper
- 1 tablespoon olive oil
- 1 teaspoon flour
- 1 cup mushrooms, chopped
- 4 cloves garlic, minced
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground coriander
- 1 cup riesling wine
- 1/2 cup chicken stock
- 2 tablespoons fresh parsley
- 1 tablespoon butter
- 1 tablespoon Dijon mustard
- rice noodles or mashed potatoes, for serving
How To Make chicken thighs with mushrooms and riesling wine

Step 1Season the chicken with salt and pepper. Add the oil to a skillet and brown the chicken, skin side down for about 10 minutes on med/low heat. Remove from the pan. Add the flour and cook, stirring, 3 minutes.

Step 2Add the mushrooms and cook 2 minutes. Add the garlic, cardamom, and coriander and cook 2 minutes. Add the wine and stock and cook, stirring constantly, until no lumps of flour are left. Add the chicken back to the pan and cook 15 to 20 more minutes.

Step 3Remove the chicken and stir in the parsley, butter, and Dijon mustard. Cook 1 minute. Serve the chicken over mashed potatoes, noodles, or rice and pour gravy over all.
