Ingredients

  • 10 cloves garlic, whole
  • 1 bunch broccoli, broken into small florets
  • 4 - bone-in chicken thighs
  • 0 - salt and pepper
  • 1 teaspoon olive oil
  • 1/2 dash dry white wine
  • 1 1/2 cups chicken stock
  • 1 teaspoon ground thyme
  • 2 teaspoons corn starch
  • 1 tablespoon water
  • 1 tablespoon lemon juice
  • - parsley, chopped

How To Make chicken thighs with garlic broccoli sauce

  • Step 1
    Place the 10 unpeeled garlic cloves in a large pot of boiling water. Boil for 5 minutes, then remove with a slotted spoon and set aside. Once cooled, remove the skin. It should slip right off. Set aside.
  • Step 2
    In the same water, add the broccoli florets and boil for about 5 minutes, then drain and set aside.
  • Step 3
    Add the oil to a large saucepan. Season the chicken with salt and pepper. Cook the chicken until browned on both sides. Remove to a plate.
  • Step 4
    Add the wine and scrape up the bits. Let the wine reduce to about 1/4 cup. Add the chicken stock, thyme, and garlic. Add the chicken back in and cook until the chicken juices run clear.
  • Step 5
    Mix the corn starch with the water. Remove the chicken to a plate.
  • Step 6
    With a potato masher, mash the garlic. Stir in the corn starch mixture.
  • Step 7
    Once thickened, add the broccoli and chicken back in. Stir in the lemon juice.
  • Step 8
    Serve garnished with parsley.
