Ingredients

  • 4 bone in skin on chicken thighs
  • salt and pepper
  • 4 tablespoons butter
  • 1 large onion chopped
  • 10 ounces button mushrooms sliced
  • 1 bay leaf
  • 3 sprigs thyme
  • 4 cloves garlic minced
  • 3 tablespoons flour
  • 1/2 cup dry white wine
  • 3 cups chicken stock
  • 2/3 cup heavy cream
  • 1 tablespoon Sherry vinegar
  • parsley for garnish

How To Make chicken thighs with creamy mushroom sauce

  • Step 1
    Season the chicken pieces with salt and pepper. Add the butter to a pan and add the chicken skin side down to brown them. Brown for about 8 minutes skin side down and 5 minutes non skin side down. Remove to a plate.
  • Step 2
    Add the onions, mushrooms, bay leaf and thyme to the pan and cook 5 minutes. Add the garlic and cook another minute. Add the flour and cook 1 minute. Add the wine and chicken stock. Cook until thickened. Taste and add salt.
  • Step 3
    Return the chicken skin side up and bring to a simmer. Cover and simmer about 10 minutes. Remove the lid and cook another 20 minutes. Remove chicken to a plate and add the heavy cream to the sauce and cook 5 minutes. Add the vinegar and cook 1 more minute. Serve the chicken and sauce garnished with parsley
