Ingredients
- 4 bone in skin on chicken thighs
- salt and pepper
- 4 tablespoons butter
- 1 large onion chopped
- 10 ounces button mushrooms sliced
- 1 bay leaf
- 3 sprigs thyme
- 4 cloves garlic minced
- 3 tablespoons flour
- 1/2 cup dry white wine
- 3 cups chicken stock
- 2/3 cup heavy cream
- 1 tablespoon Sherry vinegar
- parsley for garnish
How To Make chicken thighs with creamy mushroom sauce

Step 1Season the chicken pieces with salt and pepper. Add the butter to a pan and add the chicken skin side down to brown them. Brown for about 8 minutes skin side down and 5 minutes non skin side down. Remove to a plate.

Step 2Add the onions, mushrooms, bay leaf and thyme to the pan and cook 5 minutes. Add the garlic and cook another minute. Add the flour and cook 1 minute. Add the wine and chicken stock. Cook until thickened. Taste and add salt.

Step 3Return the chicken skin side up and bring to a simmer. Cover and simmer about 10 minutes. Remove the lid and cook another 20 minutes. Remove chicken to a plate and add the heavy cream to the sauce and cook 5 minutes. Add the vinegar and cook 1 more minute. Serve the chicken and sauce garnished with parsley
