Ingredients
- 28 pounds chicken breasts, quartered
- 1 pound fresh mushrooms, sliced
- 1/2 cup butter
- 1 tablespoon lemon juice
- 2 teaspoons salt
- 1 teaspoon onion, grated
- 1/2 pound spaghetti
- 1/4 cup flour
- 1/4 teaspoon pepper
- 1/4 teaspoon nutmeg
- 2 cups chicken broth
- 1 cup whipping cream
- 1/3 cup sherry
- 1/2 cup greeen pepper, chopped
- 1/2 cup swiss or parmesan cheese

Step 1Cook chicken in salted water until tender. Cool in broth, cut into chunks. Saute mushrooms in 1/4 c butter, sprinkle with lemon juice, 1/2 t salt and onion. Cook spaghetti and drain. Melt 1/4 c butter, blend in flour, pepper, nutmeg and 1 1/2 t salt. Gradually add broth and cream. Cook, stirring constantly until thick and smooth. Add sherry. Divide sauce in half. Add chicken in one half, vegetables and spaghetti to the other. Place spaghetti in 9x13 dish, make a cavity in the center. Pour chicken in center. Sprinkle cheese over all and bake at 375 degrees 25 min.
