I love teriyaki, so when I found this recipe in Ma's recipe box in NC in July 2019, I started drooling!

Ingredients
- 2 1/2 pounds broiler-fryer chicken, cut into serving pieces
- 1/2 cup soy sauce
- 1/2 cup vegetable oil
- 4 large potatoes
- 2 cloves minced garlic
- 2 tablespoons grated ginger
- 1 tablespoon grated tangerine rind
How To Make chicken terriyaki, ma

Step 1Combine chicken, soy, ginger, garlic and rind in large flat bowl, coating chicken well in seasonings. Cover with plastic wrap and allow to sit at room temperature while potatoes bake.

Step 2Scrub potatoes well, place in 375 degree oven for 50 min. At that time remove potatoes to bottom rack of oven if broiler is on top, or vice versa if it is on the bottom.

Step 3Place chicken on greased broiler pan and broil, bone side up 12-14 min about 5" from heat. Turn chicken and broil 12-14 min. During broiling, baste frequently with marinade.

Step 4Serve chicken and baked potatoes with fresh seasonal green vegetables like brussels sprouts, steamed briefly and lightly coated with butter.
