Ingredients
- 1 cup chicken stock
- 9 ounces tomatoes, canned whole and undrained
- 3 - garlic cloves, minced
- 2 - chicken breasts, boneless
- 1/2 cup tequila
- 2 - limes, juiced
- 1/4 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon coriander, ground
- - "just a pinch" of salt
- - olive oil
How To Make chicken tequila

Step 1Simmer the chicken breasts in the stock, until tender.

Step 2Remove and cube.

Step 3Set aside, reserving stock.

Step 4Saute\' the garlic in olive oil.

Step 5Add tomatoes (breaking up) and the remaining ingredients; simmer, covered 1/2 hour.

Step 6Add chicken and re-heat.

Step 7Toss with cooked noodles.

Step 8If sauce becomes too thick, add the chicken stock.

Step 9Sprinkle with parmesan cheese and garnish with fresh basil or parsley leaves.
