Ingredients

  • 1 cup chicken stock
  • 9 ounces tomatoes, canned whole and undrained
  • 3 - garlic cloves, minced
  • 2 - chicken breasts, boneless
  • 1/2 cup tequila
  • 2 - limes, juiced
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander, ground
  • - "just a pinch" of salt
  • - olive oil

How To Make chicken tequila

  • Step 1
    Simmer the chicken breasts in the stock, until tender.
  • Step 2
    Remove and cube.
  • Step 3
    Set aside, reserving stock.
  • Step 4
    Saute\' the garlic in olive oil.
  • Step 5
    Add tomatoes (breaking up) and the remaining ingredients; simmer, covered 1/2 hour.
  • Step 6
    Add chicken and re-heat.
  • Step 7
    Toss with cooked noodles.
  • Step 8
    If sauce becomes too thick, add the chicken stock.
  • Step 9
    Sprinkle with parmesan cheese and garnish with fresh basil or parsley leaves.
