chicken stock
9 oz
tomatoes, canned whole and undrained
garlic cloves, minced
chicken breasts, boneless
1/2 c
limes, juiced
1/4 tsp
cayenne pepper
1 tsp
chili powder
1 tsp
1/2 tsp
coriander, ground
"just a pinch" of salt
olive oil

How to Make Chicken Tequila


  • 1Simmer the chicken breasts in the stock, until tender.
  • 2Remove and cube.
  • 3Set aside, reserving stock.
  • 4Saute' the garlic in olive oil.
  • 5Add tomatoes (breaking up) and the remaining ingredients; simmer, covered 1/2 hour.
  • 6Add chicken and re-heat.
  • 7Toss with cooked noodles.
  • 8If sauce becomes too thick, add the chicken stock.
  • 9Sprinkle with parmesan cheese and garnish with fresh basil or parsley leaves.
