  • 1 c
    chicken stock
  • 9 oz
    tomatoes, canned whole and undrained
  • 3
    garlic cloves, minced
  • 2
    chicken breasts, boneless
  • 1/2 c
  • 2
    limes, juiced
  • 1/4 tsp
    cayenne pepper
  • 1 tsp
    chili powder
  • 1 tsp
  • 1/2 tsp
    coriander, ground
  • ·
    "just a pinch" of salt
  • ·
    olive oil

How to Make Chicken Tequila


  1. Simmer the chicken breasts in the stock, until tender.
  2. Remove and cube.
  3. Set aside, reserving stock.
  4. Saute' the garlic in olive oil.
  5. Add tomatoes (breaking up) and the remaining ingredients; simmer, covered 1/2 hour.
  6. Add chicken and re-heat.
  7. Toss with cooked noodles.
  8. If sauce becomes too thick, add the chicken stock.
  9. Sprinkle with parmesan cheese and garnish with fresh basil or parsley leaves.
