Ingredients

  • 8.5 oz
    corn muffin, mix
  • 1 c
    cheddar cheese, shredded
  • 1.5 c
    chicken, cooked and shredded
  • 10.75 oz
    cream of chicken soup
  • 4 oz
    green chiles, diced
  • 1 c
    corn
  • 1/2 c
    green onions, chopped
  • 1
    garlic clove, minced
  • 1 tsp
    chili powder

How to Make Chicken Tamale Pie

Step-by-Step

  1. NOTE: May substitute turkey in place of the chicken; monterey jack is also a good replacement for the cheddar in this recipe.
  2. Prepare muffin mix as directed on package, adding 1/2 cup of the cheese with the mix; set aside. (Do not bake.)
  3. Cook and stir chicken, soup, chilies, scallions, garlic and chili powder in a large saucepan until heated through.
  4. Spoon muffin mixture into a greased 2 quart casserole.
  5. Spoon hot soup mixture over muffin mixture to within 1/2" of the edge.
  6. Bake at 350 degrees for 25 minutes or until cornbread is golden.
  7. Top with cheese.
