Ingredients

  • 8.5 ounces corn muffin, mix
  • 1 cup cheddar cheese, shredded
  • 1.5 cups chicken, cooked and shredded
  • 10.75 ounces cream of chicken soup
  • 4 ounces green chiles, diced
  • 1 cup corn
  • 1/2 cup green onions, chopped
  • 1 - garlic clove, minced
  • 1 teaspoon chili powder

How To Make chicken tamale pie

  • Step 1
    NOTE: May substitute turkey in place of the chicken; monterey jack is also a good replacement for the cheddar in this recipe.
  • Step 2
    Prepare muffin mix as directed on package, adding 1/2 cup of the cheese with the mix; set aside. (Do not bake.)
  • Step 3
    Cook and stir chicken, soup, chilies, scallions, garlic and chili powder in a large saucepan until heated through.
  • Step 4
    Spoon muffin mixture into a greased 2 quart casserole.
  • Step 5
    Spoon hot soup mixture over muffin mixture to within 1/2\" of the edge.
  • Step 6
    Bake at 350 degrees for 25 minutes or until cornbread is golden.
  • Step 7
    Top with cheese.
